Flours from dehulled wheat

Versatile, Classic, Modern

Tradition is renewed: a new and versatile range designed for the daily work of today's best and most demanding craftsmen.

A line of flours from dehulled wheat: dehulling the wheat, carried out on each individual grain before milling, ensures greater wholesomeness and safety, while subsequent cylinder milling guarantees authentic, consistent and easy-to-process flours

Line

per ogni utilizzo

Linea

Bongiovanni's new line from dehulled wheat was created with the needs of a modern laboratory in mind and to respond concretely to the need to make many different types of doughs while maintaining excellent quality and results.

Le Specialità

Special Products

Wheat flours, durum wheat, and alternative grains to be used in blends or in purity to make special products with which to expand and enrich the venue's offerings.

Le Biologiche

Organic farming from 100% Italian supply chain

A selection of organic flours suitable for a wide variety of uses in bakery, pizzeria and pastry workshops, all made by milling exclusively Italian grains.

Decortication

What is hulling?

Decortication is, to date, the most advanced methodology for ensuring the complete wholesomeness and safety of flour. In fact, the grain, after being selected and cleaned, is carefully brushed by the husker, which removes the outermost layer of the grain, the one in contact with the environment, thus removing any surface impurities.

Why hulled wheat?

Because husking the grain removes the surface layer of the grain, which, in its life in the field, is in contact with the external environment and thus with air pollution, rainfall, insects and animals, equipment used by farmers and any synthetic agents used during cultivation.

Hulling the grain ensures greater wholesomeness of the product, thus guaranteeing the production of flours with an absolutely natural taste and high safety standards.

To prevent the formation of potentially harmful organisms, we dehull and clean our grain strictly dry before starting the milling process.

HEALTH AND HYGIENE SAFETY

The removal of the outermost layer of the bran makes it possible to effectively reduce any impurities that may be present on the surface of the grain: the bacterial load, residues of mycotoxins, heavy metals and mold, and traces of pesticides when used in the field.

BETTER PREPARATION FOR GRINDING

Hulling makes the grain easier to process in subsequent milling steps: it decreases the number of steps for separating the bran from the floury part.

NO WATER USE - LESS ENVIRONMENTAL IMPACT

Hulling is a dry grain cleaning method that avoids wasting water and creating bacteria and mold.

Procedure

The cleaning of the grain

INCOMING GRAIN ANALYSIS

Incoming grain must pass a series of stringent checks, is sampled and analyzed by specific equipment that is particularly precise and fast.

CLEANING TOWER

The grain, prior to milling, is dry cleaned in the Cleaning Tower, where various equipment removes coarse impurities, seeds of other grains, and grains with obvious defects. The cleaning process is handled completely dry.

OPTICAL SORTER

The grain is checked through the Optical Sorting Machine, which inspects each individual grain and removes those with defects such as spots, marks and breaks, as well as fragments of other grains or other materials.

DECORTICATORS

Hulling is a crucial step in cleaning: it is the process of removing the outermost layer of the grain, where surface impurities and any environmental contamination may be found.
